Serves 4
Ingredients:
1 t olive oil
1 lb green beans, cut into 2-inch lengths
2 T chopped fresh parsley
1 T lemon juice
2 T water
- In a large non-stick skillet heat oil over medium heat. Saute the beans until bright green, about 3 min. Add the parsley.
- Cook, stirring frequently, 3 min. Stir in lemon juice and water.
- Reduce the heat, cover, and cook an additional 2-3 min.
- Uncover and cook, stirring frequently, until the beans are tender-crisp, 2-3 min longer.
